Hey, Hi, Hello! Welcome back to the blog bbe and it’s good to be back. It’s been a few months since I last posted and to be honest, winter just really puts me into a seasonal depression where I just don’t want to do anything. I love blogging and I was still creating recipes but posting them on my IG story and FB group instead.
I honestly don’t remember where I got this recipe from. Usually I only post ones that are my very own creations BUT this one is just too good to share and it is SO EASY. I won’t lie.. there is a bit of a process to this but again, it’s EASY.

Biscotti Ingredients:
1 3/4 Cup Blanched Almond Flour
1/4 Cup Brown Sugar (can use coconut sugar)
2 Tbsp Tapioca Flour
1 tsp Baking Powder
A pinch of Pink Himalayan Salt
3 Tbsp Water
Biscotti Instructions:
1. Preheat oven to 350F and line a cookie sheet with parchment paper
2. In a large bowl, whisk together all dry ingredients
3. When thoroughly combined, add in the water and mix until you get a completely combined dough
4. shape the dough on the cookie sheet long, like a bread… about 10-11 inches long and 2-3 inches wide… Keeping the height of the dough about 1/2 inch. You know, like biscotti!
5. Bake for about 20-23 minutes or until golden brown and center is firm.
6. Let cool completely then refrigerate about 45 min-1 hour (keep on the cookie sheet).
7. Gently move the biscotti onto a cutting board and cut diagonal lines across the biscotti (think biscotti lol). You’ll get anywhere between 12-18 cookies depending on length of your dough and how thick/thin you cut them. I got about 12
8. Preheat the oven again to 250F and replace the cookies onto the parchment paper/cookie sheet, cut sides down
9. Bake the biscotti for 20 min then flip and return to oven for an addition 20 min. THEN when finished, turn the oven off, and leave them in there to finish firming up. Remove when cooled a couple hours later.
10. Store in an airtight container, ziplock, jar, etc.
**Feel free to add any additions prior to baking like crushed/chopped nuts, vanilla, seeds, chocolate chips, etc.
