Happy Monday and welcome back to the blog! Where did the weekend go… It was so much fun though celebrating Tommy’s birthday and doing something pretty normal feeling this year.
I am happy to finally share this recipe with you! I’ve made it a few times and it just gets better and better each time.
All you need is: one package of ground chicken (~1lbs), breadcrumbs, garlic powder, onion powder, salt, basil, parsley, Mozzarella cheese, Parmesan cheese, one large egg, and a jar of sauce.
I paired this with some chickpea pasta for me (regular for Tom), and it was delicious. The possibilities are endless though! These will make great meatball parm hero’s, spaghetti squash, or just eat them with some veggies on the side.
How to make:
1. Preheat oven to 400F, and prep a glass baking dish pouring 1 jar of sauce in it.
2. In a medium sized bowl, combine ground chicken, seasonings, 1/2 cup of bread crumbs, 1 large egg.
3. Once fully combined, roll out the mixture into small meatballs. I used the Perdue ground chicken packaged and it came out to about 16 meatballs.
4. Place each in the sauce evenly apart (see pictures)
5. Bake uncovered for ~30 min.
6. When the meatballs are done, sprinkle Parmesan cheese over top and mozzarella cheese covering the top.
7. Place back in the oven for an additional 5 min or until the cheese is melted.
8. Pair with some bread to make hero’s or your favorite pasta!
I enjoy making this dish because it is literally SO easy. Just one bowl, mix, pop it in the oven and BOOM, gourmet meal lol.
