I’m figuring out a lot of new foods and new ways to make foods I love with this gut health journey and to be honest, this is one of my top favs! I made this numerous times before and when I posted this on my FB recently, I got a lot of requests for the recipe! It’s super filling, tasty, and you can swap out the meats to make it different ways.
I apologize for the lack of measurements. I’m a “just toss it in” kind of cook lol. I learned from my dad and for those of you who know him, he is a chef and he just tosses things together. I wasn’t taught to cook by following recipes lol.
I cooked my chicken (about 3 tenderloins) and seasoned it with a salt free poultry seasoning, garlic powder, black ground pepper, and set that aside.
Sautée onion and garlic in EVOO or Sesame oil.
When the onion is soft and fragrant, I added the shredded cabbage mix. I used about 1/3 of the bag.
I use the “cole slaw” bag to make it easy lol.
Let that cook down a little.
Shred the chicken while that did cooks.
Make a hole in the center of the cabbage cooking and add 1 scrambled egg.
Keep scrambling the egg in the center until it is about cooked before mixing it through the cabbage.
Let that finish cooking through.
Season with a little more garlic powder if desired bc I have a problem
Then add in the shredded chicken.
Add coconut aminos. Use sparingly. I used about 1-1.5 tbsp here.
I didn’t add salt bc the aminos are salty on their own lol.
You can use soy sauce if you want. I just prefer the coconut aminos. I taste no difference and it’s healthier for you.
To make this Vegetarian compliant, omit the meat and add tofu or anything else if desired.
Feel free to sub the chicken for ground chicken, pork or ground pork.
I plan to make this again tonight and put it on cassava flour tortillas! So excited for those.
