Hey guys! I hope you’re all enjoying your week so far. I have been on a fajita/taco kick for the last couple weeks and I’m not mad. They’re filling, tasty, and you can always change them up in different ways.
I have also been obsessed with baby sweet peppers. I saute them in a pan after I cook my chicken so they char and get all of the seasoning on them.
After, I spray one side of the tortilla and brown it in the pan with a serving of shredded cheese and top with some of the chicken and peppers before folding over and browning the other side.
Yesterday I used shredded mozzarella cheese and today I used a fiesta blend. Both were delicious!
Serve with some salsa on the side and whatever toppings you want to add like a reduced fat sour cream, shredded lettuce, beans, the list goes on!
These are easy to make for meal prep too!
My seasoning consisted of paprika, cayenne pepper, black pepper, garlic powder, onion powder, and pink salt! I don’t measure but I have been wanting to create my own blend. Keep an eye out for that soon!
Are you more of a taco person or fajita person? It honestly depends on my mood for me! Most days I prefer tacos though.
