Tommy and I have been making a lot of dishes at home to try out lately and so far, they’ve been going well.
For Easter, we decided to try out some homemade ravioli with my pasta recipe. Growing up, my dad and I used to make homemade pasta dishes every year for holidays. It was a great tradition and we spent so much quality time together this way.
Tommy and I wanted to start our own traditions and what better time than now!
These were so simple to make after some manual labor of the dough making process (see how to make the pasta dough here).
I started with making the dough so it had time to rest before we began cooking anything else.
The dough process takes a little bit of time to make plus sit for 30 minutes minimum on the counter. You can make it the day before and refrigerate it but the dough becomes a stiff in the fridge. It just works out better this way since we roll ours out by hand.
After the dough is well rested, I mixed together
1 cup of ricotta cheese, 1/3 cup of Parmesan cheese, a dash of salt, and dried parsley. You can add basil too!
Mix this together well, then cut your dough for the raviolis. I just folded mine over but feel free to cut even amounts for the tops and bottoms. It helps to have a ravioli portioner so they’re all the same size as well.
After, spoon a tbsp of the cheese mixture onto the dough evenly apart (see pictures)
You need space to press the sides down.
Next step is to cut them out then press the edges down firmly with a fork.
You don’t want these popping open!!
Let them rest while you prepare a big pot of boiling water (heavily salted).
Once you have a rolling boil, put the ravioli in little at a time and stir frequently so they don’t stick together!
Cook until floating and al dente. You can feel them (without burning yourself) to see if the pasta is cooked enough. Feel at your own risk! Lol
We used a red sauce on ours with a side of chicken parmesan.
These came out bigger than I thought and they were super filling.
Unfortunately I don’t have the macros for these babies… I didn’t take the time to portion properly but I will when I remake them in the near future!
