Hey guys! I hope your all doing well and staying safe in this rainy weather. I’m excited my plants are going to grow 10x’s their size again lol. I love rainy days. They are perfect for baking and just having a lazy/cozy day. You can find me working on the addition to my new mindset program and eating this small batch I made this morning haha.
Chocolate chip cookies used to be my struggle in the baking world. For some reason, I could just not get the recipe right. They were either too “cake” like or flattened into what my sister calls “cookie roll-ups” haha.
These came out perfect and all I did was tweak my small batch sugar cookies. Worked out in my favor for sure!
I was going to post the grilled peach recipe but since it’s super rainy, I wanted to give you guys a bake indoors, cozy kind of vibe.
These cookies came out perfect!! Sometimes I wish they made more but you can just double the recipe.
Easy Small Batch Chocolate Chip Cookies
Ingredients
- 1 large Egg yolk only
- 3 tbsp Light brown sugar (gently packed)
- 3 tbsp Granulated sugar
- 4 tbsp Melted butter cooled
- 1 tsp Vanilla extract
- 1/2 cup all purpose flour Do not pack, can add 1-2Tbsp extra flour if needed!
- 1 pinch salt
- 1/4 tsp baking soda
- 3 tbsp Mini chocolate chips
Instructions
- Preheat oven to 350° and prep a cookie sheet with non stick spray or parchment paper
- Melt butter and let cool (you don't want this hot)
- Mix together cooled/melted butter, egg yolk, both sugars, and vanilla until fully combined
- Sprinkle flour, baking soda, and salt over top using a rubber spatula until combined
- Add in chocolate chips and press in with spatula until evenly combined in the dough
- Roll dough into 6-8 balls and place on prepared cookie sheet. Do not flatten them
- Bake 10-12 minutes or until edges are golden. The middle will look almost done
- Let cool and enjoy!
These are really a 1-2-3 kind of recipe. Which is the best part about the small batch cookies!
I’m honestly a cookie dough eater too… I don’t recommend since it does contain raw egg but I like to live on the edge sometimes lol.
Do not flatten them out when you spoon them onto the tray. This will ensure they bake properly.
I recommend having these with a big ol’ glass on milk (or almond milk in my case).
