Hi guys! Welcome back to another cookie recipe. I want to start off by saying this one is NOT my original recipe but you can find the original on eatingbirdfood.com
My sister and I were making some gluten free snacks when our other sister came to visit. These were the perfect bite-size, size and they are super customizable. Only a handful of ingredients too which is great bc I find so many gf recipes have 3494793 ingredients in them.
Ingredients:
1 cup finely ground almond flour
3 tbsp ghee, softened butter, or vegan butter
1/2 tsp vanilla extract
1/4 tsp salt
3 tbsp jam or preserves
Instructions:
1. Preheat oven to 350F
2. Line baking sheet with parchment paper
3. Mix all ingredients (except the preserves/jam) until a dough forms.
4. Scoop and roll the dough into small balls about 1tbsp and place on sheet
5. Make a thumbprint in the middle of each and add a small amount of the jam/preserves in each hole.
6. Bake 10-12 min or until golden on bottom
7. Let cool completely or they will fall apart
*Store in airtight container in the refrigerator up to one week or freeze up to 3 months
