I’ve been on a huge chocolate kick lately and I’m such a sucker for brownies. I can’t be alone here lol! The original recipe is from paleoglutenfree.com but I made some small changes so I wanted to still type it up here on the blog.
Being gluten free really isn’t as challenging as I thought it would be. It seems intimidating at first because you have to step out of your “norm” but once you do, you realize that there’s a whole other world out there!
To make these brownies you will need:
1/2 cup cooked and cooled mashed sweet potato
1/2 cup natural sugar free almond butter
1/3 cup cocoa powder
1/3 cup pure maple syrup or date syrup (I used date)
1 Tbsp tapioca flour (arrowroot works too)
1 Tbsp vanilla
2 Tbsp avocado oil (or any)
1/2 tsp baking soda
1 large egg
Chocolate chips and/or walnuts to top!
Line a 6×6 in baking dish with parchment paper and preheat oven to 325F.
Blend everything together with a hand mixer, food processor, or blender.
Bake 20-25 min.

These came out SO GOOD! I don’t have a food processor so I had to change things up a bit with my hand mixer and also the ingredients I had on hand. Highly recommend!!
