Almond Butter Cookies (4 Ways) GF

Hey guys! I’ve been wanting to redo this recipe since my last oops trying to make them haha. I’m so glad I did too! They came out delicious once more and I was able to add new ingredients to really change things up.

The best part, they are so easy to make and don’t require a ton of ingredients or a lot of effort (just the blending of the oats but it only takes 2 seconds).

I couldn’t wait to share these with you!

I hope you enjoy them with a tall cold glass of vanilla almond milk. They are the PERFECT milk dunking cookie.

Almond Butter Cookies 4 ways!

Ingredients
  

Basic Cookie Recipe (Read post for topping inclusion)

  • ¼ Cup Light Brown Sugar
  • 1 Large Egg
  • 1 Tbsp Vanilla Extract
  • 160g (1 Cup) Rolled Oats Blend into oat flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • ¼ tsp Salt
  • 4 Tbsp Almond Butter

Instructions
 

  • Preheat oven to 350F and prepare a greased cookie sheet.
  • In a large bowl blend together vanilla, egg, almond butter, and brown sugar with a mixer.
  • Blend oats in a bullet or food processor to create into an oat flour. Leave some pieces whole!
  • In a medium separate bowl, mix flour, salt, baking soda, and baking powder together.
  • Add flour mixture gradually into the wet ingredients. It will form into a dough ball.
  • If you are making all 4 and splitting the dough, add 1/4 dough into 4 containers.
    Double Chocolate: 1/2 Tbsp cocoa powder, 1/2 Tbsp mini chocolate chips
    Chocolate Chip: 1/2 Tbsp mini chocolate chips
    Coconut Chocolate Chip: 1/2 Tbsp coconut shreds, 1/2 Tbsp mini chocolate chips
    Coconut Double Chocolate: 1/2 Tbsp cocoa powder, 1/2 Tbsp mini chips, 1/2 tbsp coconut shreds
    ***Macro's will vary with additions by 1-3g each macro.
  • Roll dough into 16 balls and slightly flatten on the greased cookie sheet by pressing your index and middle fingers down.
  • Bake 10-12 minutes or until golden brown.
  • Let cool before removing from the cookie sheet.

These would be perfect for parties this summer and a nice healthy alternative since they aren’t loaded with 5 different types of sugar.

They’re super low calorie too so you don’t feel so guilty having 4 haha.

I am all about having a balanced diet and to me that means eating my whole food that has tons of nutrients but also having little guilty pleasures like cookies.
I love creating my favorite treats into healthier alternatives.
