Ah! Guys!! I am so excited to share this one with you. This was one of those last minute thoughts “what am I having for lunch and its already 1pm” kind of creations. Honestly, most of my most delicious recipes are the last minute, thrown together kind. I just go with the flow.
I love chickpeas because they’re an easy way to mix up any foods, they’re pretty versatile and you can do SO MUCH.
Buffalo Chickpea Salad
Ingredients
Buffalo Chickpeas
- 115 grams Chickpeas
- 1 Tbsp Buffalo Sauce
- I Can't Believe It's Not Butter Spray
- 1 pinch Garlic Powder
- 1 pinch Onion Powder
Salad
- 5 oz Romaine Lettuce Washed
- 30 g Red onion Chopped
- 3 Small Sweet Peppers Chopped
Instructions
- Heat pan on medium heat with non stick spray and a few spritz's of spray butter
- When pan it warm, add in chickpeas and coat in the spray butter.
- Drizzle about 1 Tbsp of buffalo sauce on top. You can add more if you like spicy but this amount was perfect for me.
- Cook the chickpeas on medium or medium-low until they are hot and coated in the buffalo sauce.
- While the chickpeas cook, prep your salad with the above ingredients and any others you'd like to add.
- Sprinkle garlic and onion powder on top of the chickpeas and stir around.
- Let cool slightly and add on top of your salad.
- Drizzle dressing on top and enjoy!
Notes
In a pan, I used some non stick spray and call me crazy but “I can’t believe it’s not butter” spray in there as well. Just a few sprays (like 5 LOL). I let that get hot and dumped in about half a can of chickpeas (115g specifically).
I stirred it around in the pan to coat them in the butter and poured about 1 TBSP of buffalo sauce on top. You really don’t need a lot here.
Then let those cook up a bit! Probably around 5 minutes total.
I added in some garlic and onion powder at the end and topped my salad off with my little creation.
You can definitely let these cool before putting them on your salad… I’m a weirdo with hot things on salad usually. They don’t belong together lol. But I was way too hungry to wait and let them cool.
Next time I will be sure to have a creamy dressing on hand. I plan to buy more Bolthouse Farms dressing this weekend!
You can use these in a variety of ways. Salad, wraps, sammiches, a side!! The possibilities are endless.
