Buffalo Chickpea Salad

Buffalo chickpeas to add some extra protein in your days. Use on top of your salads, in your wraps, or as a side! This recipe can be used in more than one way.

Ingredients
  

Buffalo Chickpeas
  • 115 grams Chickpeas
  • 1 Tbsp Buffalo Sauce
  • I Can't Believe It's Not Butter Spray
  • 1 pinch Garlic Powder
  • 1 pinch Onion Powder
Salad
  • 5 oz Romaine Lettuce Washed
  • 30 g Red onion Chopped
  • 3 Small Sweet Peppers Chopped

Method
 

  1. Heat pan on medium heat with non stick spray and a few spritz's of spray butter
  2. When pan it warm, add in chickpeas and coat in the spray butter.
  3. Drizzle about 1 Tbsp of buffalo sauce on top. You can add more if you like spicy but this amount was perfect for me.
  4. Cook the chickpeas on medium or medium-low until they are hot and coated in the buffalo sauce.
  5. While the chickpeas cook, prep your salad with the above ingredients and any others you'd like to add.
  6. Sprinkle garlic and onion powder on top of the chickpeas and stir around.
  7. Let cool slightly and add on top of your salad.
  8. Drizzle dressing on top and enjoy!

Notes

Macros are approximate and will vary depending on brands used, amounts measured, etc.
