Hey Guys! Sorry I was a little quiet last week. Sometimes I get a lot on my plate and the blogs take a pause! I’ll be better at this, I promise.

Cookie Dough Ice Cream Bars

This was a super easy and very yummy recipe I made recently.. and I might be a little biased because who doesn’t love raw cookie dough!

Make sure you get the edible cookie dough so you don’t get sick… I’m not liable for you eating normal raw cookie dough at your own risk haha.

Easy Chocolate Chip Cookie Dough Ice Cream Sandwiches

A super yummy excuse to eat raw cookie dough! Make sure to get the edible version and some vanilla bean ice cream. Perfect for those hot summer nights.

Ingredients
  

  • 1 Package Chocolate Chip Cookie Dough Edible Version Only
  • 1 Pint Vanilla Bean Ice Cream

Instructions
 

  • Prep a small square baking pan with parchment paper (you can spray the bottom to make removal a little easier so the cookie dough doesn't stick. Let the ice cream soften so it's easier to spread
  • Using half the cookie dough pack, roll into a ball and flatten into the bottom of the baking pan
  • Spread the softened ice cream over the cookie dough.
  • Using the remainder of the cookie dough, roll it into a ball like step 1 and flatten in your hands.
  • Place cookie dough over the ice cream and arrange it as needed
  • Freeze for at least 30 minutes to 1 hour to become solid again before cutting.
  • Remove parchment/cookie dough bars from pan and cut into 12 squares (or less for bigger pieces) and enjoy!
  • Store in an air tight container with parchment paper between if stacking.

I used parchment paper to keep the cookie dough from sticking and you can just lift it right out for some nice clean cut bars.

I used some of the left over parchment paper to line between the bars so they didn’t stick during storage.

These would be perfect for those hot summer days, BBQ’s, parties, etc!

Super easy to make and really no work to them. Plus who doesn’t love ice cream and raw cookie dough?!
