Happy Fri-yay guys! I’m super excited for this weekend. I have a few things planned along with my client check-ins and I always get so excited to see their progress and all of their hard work paying off.
Tomorrow, Tommy and I have lunch plans with a good friend of mine. I also want to look for some more home/bedroom things, buy some chicken wire fencing for the zucchini… it looks like a jungle in the crates rn lol, and possibly some crystals because I keep having some weird dreams.
I’ve been so obsessed with these small batch cookie recipes too btw. I have a 2-person dessert that I plan to make this weekend too and it’s been on my list for awhile. No, it’s not cookies haha.
Normally when I make PB cookies, they are 3-ingredients. I added a few extras but you can leave them out if you’d like!
For the normal batch, use 1-cup of peanut butter, 1 cup of sugar, and 1 large egg.
3-Ingredient Peanut Butter Cookies, Small Batch
Ingredients
- 5 Tbsp Peanut butter or ⅓ Cup
- 2 Tbsp Granulated sugar can use ⅓ cup of granulated sugar and omit the brown sugar
- 3 Tbsp Brown sugar packed
- 1 Large Egg Yolk
- ½ tsp Vanilla extract Optional
- ¼ tsp Salt Optional
- ¼ tsp Baking soda Optional
- 1 Tbsp Mini chocolate chips Optional
Instructions
- Preheat oven to 350° and prepare a baking sheet with parchment paper or a non-stick spray
- Mix together peanut butter, sugars, and egg yolk.
- (Optional steps), add in remainder of ingredients if using them and mix until well combined. Except chocolate chips
- Thoroughly combine chocolate chips if using them.
- Roll dough into 6-8 cookie balls and place on prepared baking sheet
- Use a fork to gently press a criss-cross pattern into the top of the cookie and sprinkle with sugar (optional).
- Bake 8-10 min until edges are golden.
- Let cool and enjoy!
Notes
These are perfect for those lazy days or when you need to whip up a batch quick.
Pair them with a glass of milk and you have the perfect balance!
