Hi guys! It’s been a couple weeks since I’ve added a new recipe on here and it is SPOOKY SZN! Which means allllll da fall recipes and things!
I bought dates about a week ago meaning to make something with them but I had no idea what. This recipe was a very good start if I must say myself.
Dates are actually super good for you and originally from Morocco!
They’re a great preworkout snack (simple carbs but not the refined ones). They are high in fiber, potassium, calcium, magnesium, copper, iron, and selenium. About 1/4 cup will satisfy one of your recommended daily servings of fruit, recommended by the FDA.
So here’s to the first recipe including these nutrient packed bad boys.
Banana and Date Muffins
Ingredients
- 2 Overripe bananas
- 1 Large egg
- ½ Tbsp Vanilla extract
- ¼ Cup Coconut oil melted
- 1 Cup Flour
- 1 tsp Baking soda
- 1 tsp Baking powder
- ¼ tsp Salt
- 4 Tbsp Light brown sugar
- 1 Tbsp White sugar
- 5-6 Medjool pitted dates chopped extra small
Instructions
- Preheat oven to 350°. Prep your muffins tins with liners or non-stick spray.
- In a medium bowl mash banana until very little chunks remain. Add in sugars, melted oil, vanilla, and egg and combine well
- Add in flour, baking powder, baking soda, and salt. Mix well.
- Chop dates into tiny pieces and fold into the batter.
- Fill prepared muffin tin 1/2 to 2/3 full.
- Bake approximately 18 minutes or until golden brown. Use the tooth pick method.
- Remove muffins and let cool. Enjoy!
These are so easy to make and if you want a less sweet muffin, omit the extra Tbsp of white sugar. Dates are sweet enough!
