Hi guys! I wanted to share this side recipe with you which I recommend for an easy dinner night or family gatherings during the holidays!
I made it the other day and Tom’s like… can you make the potatoes again haha. If it’s a request, it’s blog worthy.
I’m that person that throws all seasonings in without measuring SO go with the amount that you like and start small. You can always add more, you can’t take away. **Rosemary is a very potent herb. Sprinkle a little then add more if you want more.
What you’ll need: Potatoes, white or spanish onion, fresh or crushed garlic, EVOO, onion powder, garlic powder, salt, black pepper, parsely, and rosemary.
Start by heating a pan on medium high heat, then turn down to medium and add about 1-2tbsp of EVOO.
While the EVOO is warming, chop 1 clove of fresh garlic and add to the oil when it’s hot.
While the garlic is cooking ( you want golden here, not burned lol), chop your potatoes into cubes. Throw them in the pan when the garlic is golden.
Cut up half of a white or Spanish onion into small pieces and add them to the potatoes. The first time I did this, I forgot the onion so if you want to leave this out, that’s fine too!
Stir and coat everything in the pan, add your seasonings in then stir until all potatoes are coated.
Let them brown and stir periodically as to not burn them. But you want crispy here.
These paired perfect with a parmesan crusted chicken the first night, eggs the following morning and tom’s steak the second time.
PS left over potatoes make a great egg scramble for the next morning. Easy or meal preps, or when you have large gatherings. Holidays are coming up, families will be staying over, so this will help make meals budget friendly and time effective.
