Garlic Smashed Potatoes

Hey guys! I’m back with another favorite/new recipe. This was absolutely delicious and honestly, I see it being a staple for future BBQ’s.

It was so easy to make and I plan to make them again except on the grill. Let’s see how that one turns out…

Garlic Smashed Potatoes

Easy side, perfect for BBQ's, and a nice way to change up your typical "baked potato".

Ingredients Method Notes

Ingredients
  

  • 1 bag Mini potatoes Any variety. I used "The Little Potato Co."
  • 1 Garlic Clove Crushed
  • 1.5 tbsp Extra Virgin Olive Oil
  • Parsley sprinkle on top if desired
  • 1/4 tsp black pepper
  • Salt to taste

Method
 

  1. Boil potatoes until soft
  2. While potatoes are boiling, mix together EVOO and crushed garlic clove.
  3. Prepare a baking sheet and when potatoes are soft, drain and place on baking sheet.
    Pre-heat oven to 425F
  4. Next, let cool slightly until safe to touch. then use a potato masher or a fork and smashed potatoes.
  5. Coat smashed potatoes with the olive oil, garlic mixture.
  6. Bake uncovered until the bottoms are crisp and the tops are a golden color. apprx 20-25min.
  7. Sprinkle with salt, pepper, and garnish with parsley and some Parmesan cheese if you'd like!

These were super easy to make, with only a few burned finger tips in the process. Sacrificed to a good cause though…. I learned my lesson lol. Let all potatoes cool a bit before smashing!

I feel like this was a happy medium between french fry meets mashed potatoes. Enjoy!!
