Hi guys, the fall season is upon us and this week has truly come through with the cozy. I baked some pumpkin spice pumpkin muffins this morning and let me tell you.. I want to eat the entire batch lol. Not exaggerating here at all.
These are the perfect treat to kick off the season and they’re so easy to make that you can whip up a batch in 30 minutes (including baking time)! Pack in your kiddo’s lunch, snack on with some hot coffee, I might be keeping these as a weekly staple.

One Bowl Pumpkin Spice Pumpkin Muffins with a Crumble Topping (optional)
Easy one bowl pumpkin muffins you can make with pumpkin spice seasoning or simple with cinnamon! The crumble topping is the perfect addition if you choose to add it. The perfect fall baked treat!
Equipment
- 1 muffin tin
Ingredients
For the muffins
- ½ cup unsalted butter softened
- 2 eggs large
- 1 cup light brown sugar
- 1 cup pumpkin puree
- 1 tbsp pumpkin spice seasoning sub with ½-1 tbsp cinnamon if using instead
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1½ cups all-purpose flour
For the crumble topping
- ½ cup all-purpose flour
- ¼ cup light brown sugar
- ¼ cup granulated sugar
- 1 tsp cinnamon or pumpkin spice
- ¼ cup butter melted
Instructions
- Preheat oven to 325℉, grease or spray with non-stick spray muffin pan and set aside
- In a large bowl, blend everything but the flour.
- Once mixed, add the flour last and mix by hand until combined.
- Fill each muffin tin ~¾
- Mix crumb topping ingredients in a small bowl
- Top muffins with crumb topping
- Bake for 20 minutes or until golden and toothpick comes out clean
- Allow to cool before enjoying or removing from the pan!
