Garlic Smashed Potatoes

Easy side, perfect for BBQ's, and a nice way to change up your typical "baked potato".

- 1 bag Mini potatoes Any variety. I used "The Little Potato Co."
- 1 Garlic Clove Crushed
- 1.5 tbsp Extra Virgin Olive Oil
- Parsley sprinkle on top if desired
- 1/4 tsp black pepper
- Salt to taste
Boil potatoes until soft
While potatoes are boiling, mix together EVOO and crushed garlic clove.
Prepare a baking sheet and when potatoes are soft, drain and place on baking sheet. Pre-heat oven to 425F Next, let cool slightly until safe to touch. then use a potato masher or a fork and smashed potatoes.
Coat smashed potatoes with the olive oil, garlic mixture.
Bake uncovered until the bottoms are crisp and the tops are a golden color. apprx 20-25min.
Sprinkle with salt, pepper, and garnish with parsley and some Parmesan cheese if you'd like!
