Garlic Smashed Potatoes

Easy side, perfect for BBQ's, and a nice way to change up your typical "baked potato".

Ingredients
  

  • 1 bag Mini potatoes Any variety. I used "The Little Potato Co."
  • 1 Garlic Clove Crushed
  • 1.5 tbsp Extra Virgin Olive Oil
  • Parsley sprinkle on top if desired
  • 1/4 tsp black pepper
  • Salt to taste

Instructions
 

  • Boil potatoes until soft
  • While potatoes are boiling, mix together EVOO and crushed garlic clove.
  • Prepare a baking sheet and when potatoes are soft, drain and place on baking sheet.
    Pre-heat oven to 425F
  • Next, let cool slightly until safe to touch. then use a potato masher or a fork and smashed potatoes.
  • Coat smashed potatoes with the olive oil, garlic mixture.
  • Bake uncovered until the bottoms are crisp and the tops are a golden color. apprx 20-25min.
  • Sprinkle with salt, pepper, and garnish with parsley and some Parmesan cheese if you'd like!
