Good morning everyone! Welcome back to the blog. I wanted to share this super easy sugar cookie recipe I made yesterday.
The other night, my neighbor and her littles baked us some mini cupcakes and I will always bake something in return when I give you back the container. That’s just how I am haha.
I wanted to make cookies but I didn’t want to bake 378 of them lol. Those recipes are for the holidays when I hand them all out.
This recipe makes 6 large cookies. Literally PERFECT!
They didn’t take long to make either which is another plus.
I do plan to make these again for my home because I won’t be tempted to eat the entire batch lol.
I decided to melt the butter then let it cool in the fridge while I prepped everything else. This is basically a smaller version of my holiday time cookies.
It’s also a one bowl kind of deal which is another positive to this recipe.
Small batch, one bowl, only a few steps… You have no choice but to make these!
Sugar Cookies: Easy & Small Batch
Ingredients
- 1/3 Cup Granulated sugar
- 1 TBSP Granulated sugar Keep on the side
- 1 Large egg, Yolk ONLY
- 1/2 Cup Flour You may need a little extra. See Instructions for more info.
- 1 Pinch Salt
- 1 Tbsp Vanilla extract
- ¼ Cup Unsalted Butter (Or 4 Tbsp) Melted
- ¼ tsp Baking soda
- 2-3 Tbsp Mini chocolate chips Used for topping
Instructions
- Preheat oven to 350°.
- Grease a cookie sheet or use parchment paper.
- In a large bowl, combine egg yolk, sugar, melted butter (cooled), and vanilla. Stir until combined well.
- Sprinkle in dry ingredients over the sugar batter. Mix gently until combined. Do not over mix here.
- If dough is too soft, add in 1-2 Tbsp of additional flour. Dough will be softer but not hard.
- You can either let the dough sit in the fridge for 20 min OR just go ahead and bake them.
- Roll dough into 6-8 balls and roll each in the additional 1-2 Tbsp of granulated sugar.
- Place about 1-2 inches apart on the prepared cookie sheet.
- Press mini chocolate chips into the tops of the cookie balls GENTLY without flattening the cookie much. See pictures in blog.
- Bake 10-12 minutes or until the edges are turning golden.
- Let cool and enjoy! Or give to your neighbor.
I plan to make these again today so we have some for our house. They will only last a day here, I know it. But they’re easy enough to make so it doesn’t matter!
