Sugar Cookies: Easy & Small Batch

This recipe is super easy to make, quick, and only makes 6 large cookies or 8 smaller ones.
No more 24+ cookies sitting on the counter in temptation.

Ingredients
  

  • 1/3 Cup Granulated sugar
  • 1 TBSP Granulated sugar Keep on the side
  • 1 Large egg, Yolk ONLY
  • 1/2 Cup Flour You may need a little extra. See Instructions for more info.
  • 1 Pinch Salt
  • 1 Tbsp Vanilla extract
  • ¼ Cup Unsalted Butter (Or 4 Tbsp) Melted
  • ¼ tsp Baking soda
  • 2-3 Tbsp Mini chocolate chips Used for topping

Method
 

  1. Preheat oven to 350°.
  2. Grease a cookie sheet or use parchment paper.
  3. In a large bowl, combine egg yolk, sugar, melted butter (cooled), and vanilla. Stir until combined well.
  4. Sprinkle in dry ingredients over the sugar batter. Mix gently until combined. Do not over mix here.
  5. If dough is too soft, add in 1-2 Tbsp of additional flour. Dough will be softer but not hard.
  6. You can either let the dough sit in the fridge for 20 min OR just go ahead and bake them.
  7. Roll dough into 6-8 balls and roll each in the additional 1-2 Tbsp of granulated sugar.
  8. Place about 1-2 inches apart on the prepared cookie sheet.
  9. Press mini chocolate chips into the tops of the cookie balls GENTLY without flattening the cookie much. See pictures in blog.
  10. Bake 10-12 minutes or until the edges are turning golden.
  11. Let cool and enjoy! Or give to your neighbor.
