Sweet Potato Bowl

If I could eat dessert at every meal or breakfast, I probably would. I started changing up my lunches to cut back on the amount of meat I am consuming.

Due to quarantine, certain meat are very scarce like chicken, the amounts you can buy are limited, and honestly prices are beginning to raise on a lot of staples due to high demand.

I am doing what I can to eat more sustainably and I’ve been wanting to cut back on the amount of meat I consume anyway. This just gives me a little more motivation to commit to it until a habit is in place! Plus I get to be a little more creative in the kitchen and create fun recipes for you guys!

This recipe is not packed with protein but it does have a ton of nutrients and literally tastes like dessert!
It’s so simple to make too which is a win-win in my book.

Sweet Potato Bowl

A sweet alternative to a traditional lunch, appetizer/snack, or dessert! There are so many combo's you can make with this recipe too.

Ingredients
  

  • 1 Sweet Potato
  • 1 Tbsp Almond Butter Sub for peanut butter if desired
  • 1/2 packet Truvia (optional) or any desired sweetener
  • 1 Tbsp Coconut Shreds
  • 3g mini chocolate chips
  • Strawberries

Instructions
 

  • Peal and cube the potato and place into boiling water until soft.
  • When cooked, drain and mash the potato.
  • Mix in the sweetener of choice or skip this step.
  • Top with almond butter, coconut shreds, chocolate, and strawberries. Enjoy!

I only used 6oz of sweet potato. Your macros will vary depending on portion sizes used as well.
