If I could eat dessert at every meal or breakfast, I probably would. I started changing up my lunches to cut back on the amount of meat I am consuming.
Due to quarantine, certain meat are very scarce like chicken, the amounts you can buy are limited, and honestly prices are beginning to raise on a lot of staples due to high demand.
I am doing what I can to eat more sustainably and I’ve been wanting to cut back on the amount of meat I consume anyway. This just gives me a little more motivation to commit to it until a habit is in place! Plus I get to be a little more creative in the kitchen and create fun recipes for you guys!
This recipe is not packed with protein but it does have a ton of nutrients and literally tastes like dessert!
It’s so simple to make too which is a win-win in my book.
Sweet Potato Bowl
Ingredients
- 1 Sweet Potato
- 1 Tbsp Almond Butter Sub for peanut butter if desired
- 1/2 packet Truvia (optional) or any desired sweetener
- 1 Tbsp Coconut Shreds
- 3g mini chocolate chips
- Strawberries
Instructions
- Peal and cube the potato and place into boiling water until soft.
- When cooked, drain and mash the potato.
- Mix in the sweetener of choice or skip this step.
- Top with almond butter, coconut shreds, chocolate, and strawberries. Enjoy!

As I mentioned in the recipe, macros will vary depending on amounts, brands, and swaps used.
