I’m always trying to find healthier versions of my favorite foods. I love cookies so I am all about making them healthier if I can.
These cookies came out great because not only are they cute little bite sized ones but they are so delicious and not filled with all the sugar!!
They would be great to make for parties or to have with your morning coffee, guilt free. You can let the kiddies have them too without feeling bad 🤫
And they are sooo simple to make!!
White Chocolate Almond Flour Cookies
Ingredients
- 2⅔ cups Almond Flour
- 1 tsp Baking Soda
- ½ cup Sugar Free Maple Syrup or Regular
- 1 tsp Vanilla Extract
- 2 Large Eggs
- ¼ cup Coconut Oil Melted
- ½ cup White Chocolate Chips
Instructions
- In a large bowl, mix together the almond flour and baking soda. Set aside.
- In a small bowl mix together egg, vanilla, and syrup.`
- Stir the wet ingredients into the dry mixture.
- Stir in melted coconut oil.
- If batter is too wet, add a little more almond flour.
- Refrigerate for 15-20 min until the dough is cold enough to form into balls.
- Use a tablespoon to measure out the dough.
- Roll the dough into balls and flatten on a sprayed cookie sheet.
- Bake on 350 degrees for 10-12 minutes.
- Cookies will brown on the edges to tell when they are done.
- Let cool and store in the fridge 🙂
